An ethnoarchaeological study of the value attributed to various cuts of beef and pork, with the aim of contextualising the evaluation of osteological and cultural aspects of palaeodiets. Analysis is based on contemporary prices of meat in twenty-four supermarkets in sixteen developed countries. It is found that price is affected by a combination of regional preferences and actual nutritional values. |
