Abstract:		 A preliminary survey of the archaeological potential of the food industry, for which the archaeology of manufacturing, trade and transport are all significant. The article takes the case studies of grain products and dairying, as constant factors in the British diet over long periods, to show that an archaeological approach to the buildings, artefacts, landscapes and images of the food industry can enlarge our perceptions gained from documentary sources.
