Reports on the analysis of residues deriving from around 600 Roman-period mortaria. These were compared with previously published residue analysis from 237 Iron Age vessels. Suggests that these data do not reflect a significant shift in the types of foods being consumed, but that they do indicated a novel method of food preparation. PP-B
